The winery was built in 2014 in Elvillar village. It is a modern and fuctional building, thought to elaborate our wines respecting the grapes, with the least intervention than possible, to get wines that talk about their origin. We work this different size tanks, to be able to vinificate plots separately, keeping their personality.
Afterwards we age all our wines. 225l barrels are used, also a few of 500l, being the 80% of the French oak and 20% American oak. Besides we select barrels from different coopers, selecting different toast and grain in each tonellerie, that we blend on the final coupages. More over, we are using terracota anphoras as well, for the reds in the Pigeage range.
